I need to bake cakes like I need a hole in the head ....but actually I think it's really therapeutic. Anyway, I watched the Hairy Bakers (Bikers) cookery programme last week where they made a Victoria Sponge Sandwich. Now I have always stuck to the 8, 8, 8 , 4 ratio of fat, sugar, flour and eggs with good results..but apparently the W.I ( that's the Womens Institute) do a thing where they weigh the eggs in their shells, then they measure the flour out to the same weight. Like if 4 eggs weigh 9 oz you do 9 oz of all the other ingredients.
I tried it tonight and it works really well...great texture and colour..and a lovely taste.
That's the pastry sorted, and the sponge cake....I just need to work out my mothers turkey soup recipe and I am cooking on gas!!
